Of course they’re not relaxing games! They’re not supposed to be! The Doom manuals describe the games as “not a cumbersome adventure game, but a lightning fast, virtual slugathon”, so the games were meant to be fast-paced shooter games with not much of a story, not like in Doom 3 where there’s more exposition.
Oh, just comes to my mind: have you played Drakan: Order of the Flame? That game was really epic.
Slamscape - it’s mainly just nostalgia that drives this game for me, because it is ridiculously hard. There are 4 levels, and I still cannot get to the last one.
P.O.D. and Episode 1 Racer. I am terrible at racing games and I hate them, but these two were great enough that I got good at them anyway.
Jedi Knight: Dark Forces 2. One of, if not the best Star Wars game I’ve ever played.
Morrowind. Huge and endless amounts of stuff to do. When I first played it, I played for over 20 hours before I actually started doing the main quest.
Raptor: Call of the Shadows. An awesome scrolling fighter game like Raiden, but in between missions you can spend the money you earn to upgrade your fighter.
I’m sure I can probably think of some more.

Well, KoToR is a good game, but I found it too slow. It wasn’t so fast-paced, since it’s a RPG. JK1 was a fav of me, but I found the 2nd part of the JK trilogy the best. Jedi Outcast just rocked the hell out. I prefer linear storyline (and I missed that from JK3).
