Apologies for the lack of a link, but I seem to remember reading an interview with Gabe Newell a couple of years ago where he was asked the same question. I think he said that it was partly to give the game something distinct from the majority of other FPSs at the time that only used knives, and partly to help create the ‘everyman-ness’ of Gordon, as crowbars were seen as more practical in everyday life and something that a physicist might have more experience with, as opposed to a knife, or pipe or whatever.
The ‘everyman’ concept with regards to the crowbar sounds very familiar…I think I read that, but without a credible quote its all speculation. Of course, in order to be different is another reason.
I personally love the crowbar. Whenever I think of melee weapons, a crowbar immediately comes to mind. I think HL is also the first game that I actually enjoyed using the melee weapon in an FPS. O, excluding doom’s berserk mode…that doesn’t count lol.

Because te hooked end of a crowbar to the skull is more brutal than a pipe.
Basically you have to ask yourself, what kinds of melee weapons are there? First, all melee weapons must use kinetic force and not be considered projectiles. With this classification, blunt or sharp objects are your best choices. IMO, a blunt melee weapon is more useful when getting out of BM.
That leaves use with the gigantic category of blunt melee weapons. Since its HL in question, lets first narrow it down by choosing logical weapons versus ridiculous…so good bye giant dong of death, bowling ball, electric guitar, cricket bat, etc… The only decent melee weapons left are basically long, heavy objects…pipe, 2x4, bat, wrench, crowbar, axe, sledge hammer. I can’t really think of any others that aren’t too impractical for the developers to use.
I definitely think they made the perfect choice, for multiple reasons.

Meh, I was trying to put together a quick n’ dirty last-minute costume to go to a Halloween party that year, and happened to have a lab coat at my disposal… so I decided to go as Scientist-Freeman since I didn’t very well have enough time to go all-out and make a freaking HEV suit or anything. Figured kahkis, a lab coat, glasses, and a tie (a ridiculous one) would be lame, so I went out and bought the crowbar and paint together at Home Depot that very evening.
You should have seen the evil glare this one Home Depot guy gave me as I was ringing them both up.
On Halloween night.

Well, I think there’s no question about how Iconic it is. I found one in my basement and HL was the first thing I though of.

I think it might have been done to make it a bit more believable/immersive. It takes some training to know how to use a knife well, not to mention taking care not to hurt yourself, but anyone can pick up a crowbar and go to town on some zombie skulls.
If not that, then probably just because it was different.
