It probably has to do with water content contained with a hard outer rind. I’ve never noticed a headcrab actually EATING anyone’s face, they’re merely contorted in agony after you finally knock the headcrab off of them, so it’s more likely to be some sort of needle like proboscis that they suck the liquids through which also happens to disconnect the higher brain functions from the brain stem.

I would think that it should. If it can survive on a food that doesn’t fight back, there’s no reason to go after the hostile target. However HL2 actually has Watermellons, so you could check for yourself, but I don’t think there’s any AI override that tells the headcrabs to go after watermelon instead of gordon if it’s available. So most likely it’s gong to be; theory = Yes, practice = No.
