it’s because when portal was first announced, people thought that the Aperture Science Handheld Portal Device (ASHPD) had a connection to Adrian Shepard. Obviously that was a coincidence, but Valve included the highlighted letters as a sort of easter egg.

do any other valve games have easter eggs like this?

when you play Gunman Chronicles, the ending pretty much explains who the G-man is.

Yup, but it was abandoned and left to rot by valve soon after it was released and it was never brought to steam. You can probably get it cheap on Amazon or grab a torrent of it.
