I just made this x3 a couple days ago, still eating the left overs.
Mind you I read this in Russian, and it’s a bit tricky translating in my mind, since I don’t know any culinary terms. D:
1 Eggplant
1 Medium onion
1 cup of plain yogurt
tomatoes, regular ( or canned diced )
Cut the peel off the eggplant and cut it into ~1in cubes
Finely cut the onion
If you’re using fresh tomatoes…
Parboil the tomatoes a little, remove their skin, cut as for a salad
Saute the onions. Use oil initially, but if they start to fry, add water instead of more oil.
When half-way finished, add the tomatoes + any juice they let off or any juice that was in the can
Keep sauteing until there’s little water left
Get out a pot, add the saute’d onions / tomatoes and the eggplant. Mix them together
Set it on medium, medium-low. Let cook until finished. It should take about an hour
Add salt and pepper to taste
If you have lemon juice, add a teaspoon or two
Stir occasionally
10-15 min before completion add yogurt
Doesn’t take a lot of effort, tastes good, lasts a while. Awesome.
